Tartare Preparation

    Prepare the Ahi Tuna

    Finely dice the Ahi tuna into small cubes, about 1/4 inch in size. Place in a medium bowl.

    Mix Ingredients

    Add diced tomato, micro herbs, spicy lemon pickle, and freshly ground black pepper to the bowl with Ahi tuna. Gently mix to combine all ingredients. Set aside in the refrigerator to chill while preparing the other components.

Toasted Garlic

    Toast the Garlic

    In a small skillet, heat olive oil over medium heat. Add sliced garlic and sauté until golden brown and crispy, about 3-4 minutes. Remove from heat and drain on paper towels. Set aside.

Black Pepper Tuile

    Prepare the Tuile Batter

    In a mixing bowl, combine all-purpose flour, freshly ground black pepper, melted butter, and water. Mix until a smooth batter forms.

    Bake the Tuiles

    Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Drop small spoonfuls of the batter onto the prepared sheet, spreading them into thin circles. Bake for 8-10 minutes, or until golden and crisp. Remove from oven and let cool.

Assembly

    Plate the Tartare

    Using a ring mold, carefully plate the Ahi tuna tartare mixture onto a serving plate. Remove the mold gently.

    Garnish and Serve

    Sprinkle the toasted garlic over the tartare. Serve with black pepper tuiles on the side. Enjoy your fresh Ahi Tuna Tartare!
