Prep
Prepare vegetables and herbs: separate and wash butter lettuce leaves, pat dry. Julienne carrot and cucumber into thin matchsticks. Thinly slice red bell pepper and green onions. Remove Thai basil leaves from stems and roughly chop the leaves if large. Finely mince garlic and shallot; slice chiles.
If using nuts, toast cashews or peanuts in a dry skillet over medium heat for 2–3 minutes until fragrant; roughly chop and set aside.
Make the Filling
Heat pan
Heat a large skillet or wok over medium-high heat and add 1 tablespoon vegetable oil. Swirl to coat.
Aromatics
Add minced garlic, chopped shallot, and sliced chiles to the hot oil. Stir-fry for 30–45 seconds until fragrant but not browned.
Cook meat
Add the ground chicken (or turkey) and break it up with a spatula. Cook, stirring and scraping, for 4–6 minutes until fully cooked and no pink remains.
Season
Stir in fish sauce, light soy sauce, oyster sauce, and brown sugar. Mix thoroughly so the meat is evenly coated.
Adjust moisture
Add 2 tablespoons water and 1 tablespoon lime juice, stir and simmer 1–2 minutes to combine and create a slightly saucy consistency. Taste and adjust: add an extra 1/2 teaspoon fish sauce or 1/2 teaspoon sugar if desired.
Finish with herbs
Turn off the heat and immediately stir in Thai basil leaves, sliced green onions, and julienned red bell pepper. Toss until basil is wilted but still bright and the veggies are slightly tender-crisp.
If using toasted nuts, stir them in now for crunch. Transfer filling to a bowl to stop cooking and keep warm.
Assemble Wraps
Arrange washed lettuce leaves on a platter. Spoon about 2–3 tablespoons of the warm Thai basil filling into the center of each leaf (adjust depending on leaf size).
Serve immediately with optional sweet chili dipping sauce (mix the dipping sauce ingredients together) on the side.
