    Rinse the mussels under cold water. Scrub the shells and remove the beards. Discard any mussels that are open and do not close when tapped.

    Finely chop the shallots, mince the garlic, and chop the parsley.

Cooking

    In a large pot or Dutch oven, heat the olive oil over medium heat.

    Add the shallots and cook for 2-3 minutes until softened. Add the garlic and cook for another 30 seconds until fragrant.

    Pour in the white wine and bring to a simmer. Cook for 2 minutes to reduce slightly.

    Add the mussels to the pot, cover with a lid, and cook for 5-7 minutes, shaking the pot occasionally, until the mussels have opened.

    Remove the pot from heat. Discard any mussels that did not open. Stir in the butter, lemon juice, parsley, salt, and black pepper.
