Method

Infuse the Tequila

    Prepare the infusion

    Slice the habanero peppers in half and remove seeds for a milder infusion, or leave them in for more heat. Place the peppers into a sealable glass jar with the tequila.

    Seal the jar and let it infuse for 12 to 24 hours at room temperature. Taste every few hours to achieve desired spice level.

    Strain the tequila to remove the peppers and store the infused tequila in a clean bottle.

Make the Cajun Margarita

    Rim a rocks glass with lime juice and dip it in Tajin or chili salt. Fill the glass with ice and set aside.

    In a cocktail shaker, combine 2 oz of habanero-infused tequila, 1 oz lime juice, and 0.75 oz agave syrup. Fill the shaker with ice and shake vigorously for 15 seconds.

    Strain the mixture into the prepared glass over fresh ice. Garnish with a lime wedge and serve immediately.
