    Sauté the proteins

    In a large skillet or saucepan, heat olive oil over medium heat. Add the sausage and cook until browned, about 3 minutes. Add the diced chicken and cook until no longer pink, about 5 minutes. Remove sausage and chicken from the pan and set aside.

    Cook vegetables

    In the same pan, add the onion, bell pepper, and celery. Cook for 4–5 minutes until softened. Add the garlic and cook for another minute.

    Simmer the rice

    Add the diced tomatoes, chicken broth, rice, Cajun seasoning, salt, and pepper to the pan. Stir to combine. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.

    Add proteins and shrimp

    Return the cooked sausage and chicken to the pan. Add the shrimp and stir well. Cover and cook for an additional 5–7 minutes, or until the shrimp is pink and cooked through and the rice is tender.

    Remove from heat and let sit covered for 5 minutes. Fluff with a fork and garnish with sliced green onions before serving.
