Prepare Pretzel Dough

    In a large bowl, dissolve yeast and brown sugar in warm water. Let sit for 5 minutes until foamy.

    Add flour, salt, and melted butter. Mix until a dough forms, then knead for 5-7 minutes until smooth and elastic.

    Place dough in a greased bowl, cover, and let rise in a warm area for 1 hour or until doubled in size.

Prepare Crab Filling

    In a medium bowl, mix together crab meat, cream cheese, mayonnaise, Old Bay seasoning, lemon juice, and green onions until well combined.

Shape and Boil Pretzels

    Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Divide dough into 8 equal pieces. Roll each piece into a rope and form into mini pretzel shapes.

    Bring 4 cups of water and baking soda to a boil. Carefully drop pretzels into the bath for 20 seconds, then place on the prepared baking sheet.

Fill and Bake

    Spoon about 1 tablespoon of crab filling on top center of each pretzel.

    Brush pretzels with beaten egg, sprinkle with kosher salt and shredded cheddar cheese.
