Prepare the Fries

    Cut Potatoes

    Wash and peel the potatoes. Cut them into thin matchstick-sized fries.

    Soak Potatoes

    Place cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry.

    Fry Potatoes

    Heat vegetable oil in a deep pot to 350°F (175°C). Fry the potatoes in batches for 3–5 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Season Fries

    While still hot, season fries with salt and Old Bay seasoning.

Make the Crab Topping

    In a skillet over medium heat, melt the butter. Add minced garlic and sauté for 30 seconds. Add lump crab meat and lemon juice. Cook for 2–3 minutes until heated through. Stir in chopped parsley and set aside.

Make the Cheese Sauce

    In a small saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute. Slowly add the milk, whisking constantly to avoid lumps. Cook until slightly thickened, about 3–5 minutes. Stir in shredded cheddar cheese, salt, and pepper. Cook until cheese is melted and sauce is smooth.

Assemble the Mini Crab Fries

    Arrange fries on a serving plate or individual mini fry baskets. Drizzle with warm cheese sauce. Top with warm crab mixture. Sprinkle with chopped chives and a pinch of Old Bay seasoning.
