Seasoning (Choose One)

Method

Preparation

  1. 1

Pat the chicken wings dry with paper towels to remove excess moisture for better crisping.

  2. 2

Optional: Let the wings sit at room temperature for 20 minutes before frying to ensure even cooking.

Frying the Wings

  1. 3

In a deep fryer or heavy-bottomed pot, heat vegetable oil to 350°F (175°C).

  2. 4

Fry the wings in batches for 8–10 minutes or until golden brown and fully cooked (internal temperature of 165°F/74°C).

  3. 5

Remove wings and place on a paper towel-lined plate to drain excess oil.

Seasoning the Wings

  1. 6

In a small saucepan, melt unsalted butter over medium heat.

  2. 7

Choose your seasoning: add either lemon pepper or Old Bay seasoning to the melted butter and stir to combine.

  3. 8

Toss the hot fried wings in the seasoned butter until evenly coated.

Serving

  1. 9

Serve wings hot with your choice of dipping sauce, such as ranch or blue cheese, and optional celery sticks.
