Method

Marinate and Cook Chicken

    Prepare marinade

    In a blender or food processor, combine scallions, garlic, ginger, thyme, allspice, cinnamon, nutmeg, brown sugar, soy sauce, lime juice, olive oil, scotch bonnet pepper, salt, and black pepper. Blend until smooth.

    Marinate chicken

    Place chicken thighs in a bowl or zip-top bag. Pour the marinade over the chicken and mix to coat. Cover and refrigerate for at least 2 hours or overnight for best flavor.

    Cook chicken

    Preheat grill or skillet over medium-high heat. Remove chicken from marinade and cook for 6–7 minutes per side, or until fully cooked and slightly charred. Let rest for 5 minutes, then slice or shred.

Assemble Sliders

    Toast slider buns lightly, if desired. Spread mayonnaise on the bottom halves of the buns.

    Add a lettuce leaf to each bun, then top with sliced or shredded jerk chicken.
