Preparing the Potatoes

Wash and peel the russet potatoes.

Cut the potatoes lengthwise into 1/4-inch thick sticks to form fries.

Place the cut fries in a large bowl of cold water and soak for at least 30 minutes to remove excess starch.

Drain the fries and pat them completely dry with paper towels.
Frying the Fries

Heat the vegetable oil in a deep fryer or large heavy pot to 325°F (165°C).

Fry the potatoes in batches for about 4-5 minutes until they are soft but not brown. Remove and drain on paper towels.

Increase the oil temperature to 375°F (190°C).

Return the fries to the hot oil in batches and fry until golden brown and crispy, about 2-3 minutes.

Remove the fries and drain on paper towels. Immediately season with salt and optional seasonings.
