Preparation

    In a small bowl, mix buttermilk and hot sauce. Add oysters and let soak for 10 minutes.

    In another bowl, combine flour, cornmeal, salt, black pepper, and cayenne pepper to create the breading mixture.

Frying

    Heat vegetable oil in a deep skillet or saucepan over medium-high heat to 350°F (175°C).

    Remove oysters from buttermilk, allowing excess to drip off. Dredge each oyster in the breading mixture, pressing lightly to adhere.

    Carefully place oysters into the hot oil and fry for about 2–3 minutes, or until golden brown and crispy. Do not overcrowd the pan.

    Remove oysters with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Serving

    Serve fried oysters immediately with lemon wedges and tartar sauce or remoulade on the side.
