Crab Clusters
Breading Mixture
For Frying
Method
Preparation
- 1
In a large bowl, whisk together the buttermilk and hot sauce.
- 2
Add the crab clusters to the buttermilk mixture, ensuring they're fully coated. Cover and marinate in the refrigerator for 20 minutes.
- 3
In another bowl, mix together the flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Frying
- 4
Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- 5
Remove the crab clusters from the marinade, allowing the excess liquid to drip off.
- 6
Dredge each crab cluster in the flour and cornmeal mixture, pressing lightly to adhere the coating.
- 7
Carefully lower the crab clusters into the hot oil and fry in batches for 4–5 minutes or until golden and crispy.
- 8
Remove with a slotted spoon and drain on paper towels. Repeat with remaining clusters.
Serving
- 9
Serve fried crab clusters hot with lemon wedges and sprinkle with fresh parsley if desired.
