Prepare Cauliflower

Bring 6 cups of water to a boil in a large pot and add 1 tsp of salt.

Add the cauliflower florets and blanch for 2 minutes. Drain and set aside to cool.
Make the Batter

In a mixing bowl, combine flour, cornstarch, baking powder, salt, pepper, garlic powder, and paprika.

Slowly whisk in the cold sparkling water until the batter is smooth and thick enough to coat the back of a spoon.
Frying

Heat the vegetable oil in a deep fryer or large, heavy-bottomed pot to 350°F (175°C).

Dip the cauliflower florets into the batter, allowing excess to drip off.

Carefully lower battered florets into the hot oil in batches. Fry for 3–4 minutes or until golden brown and crispy.

Remove with a slotted spoon and drain on paper towels.
Serve

Transfer fried cauliflower to a serving platter. Garnish with chopped parsley and serve with lemon wedges, if desired.
