Prepare the Chips

    Peel and cut potatoes into thick fries. Rinse in cold water and soak for 30 minutes to remove excess starch.

    Drain and pat dry with a clean towel.

First Fry for Chips

    Heat oil in a deep fryer or deep pot to 325°F (160°C).

    Blanch the chips in batches for 3–4 minutes until soft but not colored. Remove and drain on paper towels.

Make the Batter

    In a bowl, whisk together flour, baking powder, and salt.

    Gradually whisk in cold sparkling water or beer until a smooth, thick batter forms. Let stand for 10 minutes.

Prepare the Fish

    Season fish fillets with salt and black pepper.

    Lightly dust each fillet with flour to help the batter adhere.

Fry the Fish

    Increase oil temperature to 350°F (175°C).

    Dip prepared fillets into batter, allowing excess to drip off, then carefully place in hot oil.

    Fry for 5–7 minutes until golden and crispy, turning once. Cook in batches if necessary.

Final Fry for Chips

    Increase oil temperature to 375°F (190°C).

    Fry blanched chips in batches for 2–3 minutes until golden and crispy.

    Serve hot fish and chips with malt vinegar or lemon wedges and tartar sauce on the side.
