Macaroni and Cheese Base

Method

Prepare Macaroni and Cheese

  1. 1

    Cook pasta

Boil elbow macaroni in salted water according to package instructions. Drain and set aside.

  2. 2

    Make cheese sauce

In a saucepan, melt butter over medium heat. Add flour and whisk for 1-2 minutes to form a roux. Gradually whisk in milk, stirring constantly until thickened, about 3-4 minutes.

  3. 3

Stir in shredded cheddar cheese, salt, and pepper until cheese is melted and sauce is smooth.

  4. 4

Add cooked macaroni to cheese sauce and stir to coat. Let cool slightly.

Mix and Form Bites

  1. 5

Gently fold crab meat, green onions, garlic powder, and Old Bay seasoning into the mac and cheese mixture.

  2. 6

Once the mixture is cool enough to handle, stir in a beaten egg to help bind the bites.

  3. 7

Form the mixture into small balls (about 1.5 inches in diameter). Place them on a baking sheet and refrigerate for 30 minutes to firm up.

Coat and Fry

  1. 8

Roll each chilled mac bite in breadcrumbs until evenly coated.

  2. 9

Heat vegetable oil in a deep skillet or saucepan to 350°F (175°C).

  3. 10

Fry the bites in batches for 2-3 minutes until golden brown and crispy. Do not overcrowd the pan.

  4. 11

Remove with a slotted spoon and drain on paper towels. Serve warm.
