Method
Prepare the Fries

Peel and cut the russet potatoes into thin fries. Rinse in cold water and soak for at least 30 minutes to remove excess starch.

Heat vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C).

Drain and pat the fries dry thoroughly. Fry in batches for 3–5 minutes until golden and crispy. Drain on paper towels.

Season immediately with salt and Old Bay seasoning.
Prepare the Crab Topping

Add lump crab meat and lemon juice, and gently stir until warmed through, about 2–3 minutes. Stir in parsley.
Make the Cheese Sauce (Optional)

In a small saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute to form a roux.

Gradually whisk in milk and cook until thickened, about 3–5 minutes.

Stir in shredded cheddar cheese until melted and smooth. Season with salt and pepper.
Assemble the Crab Fries

Place hot fries on a serving plate. (Optional) Drizzle cheese sauce over the fries.
