Method
Prepare the Crab Filling
- 1
In a medium mixing bowl, combine cream cheese, sour cream, lime juice, chopped cilantro, jalapeño, garlic, salt, and pepper. Mix until smooth.
- 2
Gently fold in the lump crab meat until evenly incorporated without breaking up the chunks too much. Set aside.
Prepare the Tortilla Base
- 3
Preheat oven to 375°F (190°C).
- 4
Brush both sides of the flour tortillas lightly with olive oil and place on a baking sheet.
- 5
Bake tortillas for 5–7 minutes, flipping halfway, until lightly crisped but not fully golden.
Assemble and Bake
- 6
Spread an even layer of crab filling over each toasted tortilla.
- 7
Sprinkle shredded cheese evenly over the top of each.
- 8
Return to oven and bake for an additional 10–12 minutes, or until cheese is melted and bubbly.
Garnish and Serve
- 9
Remove the Crab-a-Ritas from the oven and top with diced avocado, green onions, and fresh cilantro leaves.
- 10
Serve warm with lime wedges on the side.
