Cut the catfish
Cut the catfish fillets into bite-sized nugget pieces, about 1 to 1.5 inches each.

Marinate the catfish
In a medium bowl, combine the buttermilk and hot sauce. Add the catfish nuggets and mix to coat. Cover and refrigerate for at least 30 minutes, up to 2 hours.
Breading

In a large bowl or zip-top bag, mix together the cornmeal, flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Remove the catfish pieces from the marinade, allowing excess liquid to drip off. Dredge each nugget in the breading mixture, pressing to coat well. Set aside on a wire rack or plate.
Frying

Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

Working in batches, fry the catfish nuggets for 3–4 minutes, turning occasionally, until golden brown and cooked through.
