Preparing the Potatoes

Wash and cut potatoes
Scrub the potatoes clean and cut them into thin strips, roughly 1/4 inch thick.

Soak the fries
Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat dry thoroughly.
Frying the Fries

Heat the oil
In a deep fryer or large heavy-bottomed pot, heat the vegetable oil to 350°F (175°C).

Fry the potatoes
Fry the potatoes in batches for 3–4 minutes until just golden and tender. Remove and drain on paper towels.

Final fry
Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 2–3 minutes until crispy and golden brown. Drain and season immediately.
Seasoning the Fries

Mix Cajun seasoning
In a small bowl, combine paprika, garlic powder, onion powder, oregano, thyme, black pepper, cayenne, and salt.

While the fries are still hot, toss them with the Cajun seasoning mixture to coat evenly. Serve immediately.
