Clean the mussels by scrubbing the shells under cold water and removing any beards. Discard any mussels that are open and do not close when tapped.

Finely chop the shallot and garlic. Roughly chop the fresh parsley.
Cooking

In a large skillet or pot, heat olive oil over medium heat. Add the shallot and garlic and sauté for 2-3 minutes until fragrant and softened.

Add the thyme and red pepper flakes and cook for another 30 seconds.
