Main Ingredients

Method

Preparation

  1. 1

Rinse the clams under cold water to remove any sand or grit. Discard any clams with cracked shells or that do not close when tapped.

Cooking

  1. 2

Heat olive oil in a medium saucepan over medium heat.

  2. 3

Add the minced garlic and red pepper flakes and sauté for about 30 seconds until fragrant.

  3. 4

Add the cleaned clams and pour in the white wine. Cover the pot with a lid.

  4. 5

Cook for 5–7 minutes, shaking the pot occasionally, until the clams have opened. Discard any clams that did not open.

  5. 6

Season with salt and black pepper to taste.

  6. 7

Sprinkle chopped parsley over the clams and stir gently to combine.

Serving

  1. 8

Serve the clams hot with lemon wedges on the side. Optionally, serve with crusty bread to soak up the broth.
