Prepare Mignonette Sauce

    Mix Ingredients

    In a small bowl, combine red wine vinegar, minced shallot, and freshly ground black pepper. Stir well and refrigerate for at least 15 minutes to allow flavors to meld.

Shuck the Oysters

    Open Oysters

    Using an oyster knife, carefully shuck each oyster over a bowl to catch any liquid (liquor). Discard the top shell and loosen the oyster from the bottom shell while keeping it in its natural juices.

Plate and Serve

    Arrange Oysters

    Spread crushed ice over a serving platter. Nestle the shucked oysters on the half shell into the ice to keep them cold.

    Serve oysters immediately with lemon wedges, a spoonful of mignonette sauce, cocktail sauce, hot sauce, and a sprinkle of parsley if desired.
