Preparing the Salmon

Marinate the Salmon
In a small bowl, whisk together 2 tablespoons of olive oil, minced garlic, lemon juice, salt, black pepper, and chopped dill. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

Preheat the Grill
Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.

Prepare the Vegetables
In a large bowl, toss the sliced zucchini, bell pepper, and asparagus with 1 tablespoon of olive oil, salt, and black pepper.

Cooking the Rice

Cook the Rice
In a medium saucepan, bring 4 cups of water to a boil. Add 2 cups of white rice and 1 teaspoon of salt. Reduce the heat to low, cover, and simmer for about 18-20 minutes, or until the rice is tender and the water is absorbed.
Serving

Plate the Dish
Once everything is cooked, fluff the rice with a fork and serve it on plates. Top with grilled salmon and arrange the grilled vegetables on the side. Garnish with additional fresh dill if desired.
