Method

Chocolate Mousse

    Melt the Chocolate

    In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

    Whip the Egg Whites

    In another bowl, beat the egg whites until foamy. Gradually add sugar and continue to beat until stiff peaks form.

    Combine Mixtures

    Fold the cooled chocolate into the whipped cream, then gently fold in the egg whites until fully incorporated.

    Chill

    Spoon the mousse into serving glasses and refrigerate for at least 2 hours before serving.

Fruit Tart

    Prepare the Tart Crust

    If using a pre-made tart crust, ensure it's baked and cooled. If making from scratch, bake according to recipe and cool.

    Fill with Pastry Cream

    Spread the pastry cream evenly into the tart crust, smoothing the top with a spatula.

    Arrange Fresh Fruits

    Slice the assorted fresh fruits and arrange them artistically on top of the pastry cream.

    Glaze the Tart

    Brush the apricot glaze over the fruits to give a shiny finish.

    Chill Before Serving

    Refrigerate the tart for at least 30 minutes before slicing and serving.

Panna Cotta

    Soak Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes, until softened.

    Heat Cream and Sugar

    In a saucepan, combine the heavy cream and sugar. Heat gently until the sugar dissolves and the mixture is warm but not boiling.

    Add Gelatin

    Remove the saucepan from heat, squeeze excess water from the gelatin sheets, and stir them into the warm cream until fully dissolved.

    Add Vanilla

    Split the vanilla bean and scrape the seeds into the cream mixture, stirring to combine.

    Chill

    Pour the mixture into molds and refrigerate for at least 4 hours or until set.
