Cake Preparation

- 2
Melt the Chocolate and Butter
In a medium saucepan over low heat, melt the unsalted butter and semi-sweet chocolate chips together, stirring frequently until smooth. Remove from the heat and let it cool slightly.
- 3
Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and egg yolks until the mixture is thick and pale. This should take about 3-5 minutes.
- 4
Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture while whisking continuously. Add in the vanilla extract and a pinch of salt. Mix until well combined.
- 5
Add Flour
Gently fold in the flour using a spatula until just combined. Be careful not to overmix.
- 6
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 7
Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.
- 8
Cool Slightly
Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges of each ramekin to loosen the cakes.
