Method

Chips

  1. 1

    Prepare the Tortillas

Cut the corn tortillas into triangles.

  2. 2

    Fry the Chips

In a large pot, heat the vegetable oil over medium-high heat. Once hot, add the tortilla triangles in batches and fry until golden and crispy, about 2-3 minutes per batch. Remove and drain on paper towels. Season with salt to taste.

Nacho Cheese Sauce

  1. 3

    Make the Cheese Sauce

In a saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1-2 minutes until slightly golden. Gradually add the milk while whisking continuously to avoid lumps. Cook until the mixture thickens.

  2. 4

    Add Cheeses and Flavor

Stir in the cheddar and Monterey Jack cheeses, chili powder, and salt. Continue stirring until the cheese has melted and the sauce is smooth. Remove from heat and set aside.

Toppings

  1. 5

    Cook the Ground Beef

In a skillet, cook the ground beef over medium heat until browned and fully cooked, about 8-10 minutes. Drain excess fat and set aside.

  2. 6

    Assemble the Nachos

On a large platter or baking sheet, layer the homemade chips. Evenly spread the refried beans over the chips, followed by the cooked ground beef. Pour the warm nacho cheese sauce over the top.

  3. 7

    Add Final Toppings

Top the nachos with dollops of sour cream, guacamole, and sprinkle with pico de gallo. Serve immediately.
