Prepare the Vegetables

Dice the bell pepper and onion into small pieces. Rinse the fresh spinach under cold water and pat dry.

Cook the Vegetables

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell pepper and onion. Sauté for about 3-4 minutes until they are soft. Add the spinach and cook for another 1-2 minutes until wilted. Season with salt and pepper to taste. Remove from heat and set aside.

Layer Ingredients

On one half of each flour tortilla, layer shredded cheddar cheese, mozzarella cheese, sautéed vegetables, shredded chicken, and black beans.

Fold the Tortilla

Fold the other half of the tortilla over the filled side to create a half-moon shape.

Cooking

Cook the Quesadillas

In the same skillet, add 1 tablespoon of olive oil over medium heat. Place the folded tortillas in the skillet and cook for about 3-4 minutes on each side until golden brown and the cheese has melted. You may need to cook them in batches.

Slice and Serve

Once cooked, remove the quesadillas from the skillet. Let them cool for a minute, then slice into wedges and serve warm.
