Prepare the Tortillas
Cut the corn tortillas into wedges, forming triangles.

Fry the Chips
In a large pot or deep fryer, heat the vegetable oil over medium heat until it reaches 350°F (175°C). Carefully add a handful of tortilla wedges to the hot oil. Fry until they are golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Repeat with remaining tortilla wedges.

Add Milk and Cheese
Slowly whisk in the milk, bringing the mixture to a simmer. Add the cheddar cheese and monterey jack cheese, stirring until completely melted and smooth.

Season the Sauce
Stir in the jalapeño juice, salt, ground cumin, and smoked paprika. Mix well and let it simmer for an additional 2-3 minutes, until thickened. Remove from heat.

Serve the Nachos
On a large platter, arrange the fried tortilla chips in an even layer. Drizzle the nacho cheese sauce generously over the chips. Top with pickled jalapeños to taste. Serve immediately.
