Preparing the Carnitas

Prepare the Pork
Cut the pork shoulder into large chunks and season with salt, black pepper, cumin, and oregano. Make sure to rub the spices evenly over the meat.

Add Aromatics
Peel and smash the garlic cloves. Cut the onion into quarters. Place the seasoned pork, garlic, and onion into a large pot or Dutch oven.

Add Liquid
Pour the orange juice and lime juice over the pork and aromatics. Ensure the meat is well coated.

Simmer the Pork
Cover the pot and bring to a boil. Once boiling, reduce the heat to low and let it simmer for about 3 hours, or until the pork is tender and easily shredded.

Crisp the Carnitas (Optional)
For crispy edges, spread the shredded pork on a baking sheet and broil it in the oven for 5-10 minutes until crispy.

Slice the Jalapeños
Wearing gloves, slice the jalapeños into rings. Remove seeds for less heat if desired.
