Burrito Filling

1. Cook the Beef

In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a spatula.

2. Add Onion and Garlic

Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

3. Season the Filling

Stir in the cumin, chili powder, salt, and black pepper. Mix well and cook for an additional 2 minutes.

4. Add Beans and Rice

Drain and rinse the black beans. Add them along with the cooked rice to the skillet. Stir to combine and heat through, about 2-3 minutes.

Enchilada Sauce

5. Prepare the Sauce

In a medium saucepan, heat the olive oil over medium heat. Add the tomato sauce, chicken broth, cumin, chili powder, garlic powder, onion powder, salt, and black pepper. Stir to combine.

6. Simmer the Sauce

Bring the sauce to a simmer and cook for about 10 minutes, stirring occasionally, until slightly thickened.

Assembly

7. Fill the Tortillas

Preheat the oven to 375°F (190°C). Take a tortilla and add a generous amount of the burrito filling in the center. Sprinkle with cheddar cheese.

8. Roll the Burritos

Fold in the sides of the tortilla and roll from the bottom up to enclose the filling. Place seam-side down in a baking dish.

9. Add Sauce and Bake

Pour the enchilada sauce over the rolled burritos. Cover the dish with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until bubbly.

Serving

10. Garnish and Serve

Remove the dish from the oven. Top with sour cream, sliced green onions, and chopped cilantro before serving.
