Prepare Ingredients
Clean and slice squid
If not already prepared, rinse squid well, remove quill and innards. Pat dry. Slice tubes into 1/2-inch rings and leave tentacles whole. Pat squid dry again to remove excess moisture (this helps prevent rubbery squid).
Cook noodles
Bring a pot of salted water to a boil. Cook noodles according to package instructions until just al dente. Drain and toss with 1 teaspoon vegetable oil to prevent sticking. Set aside.
Prep vegetables and aromatics
Mince garlic, julienne ginger, slice scallion whites and greens separately, thinly slice red bell pepper, and chop bok choy or napa. Measure and combine sauce ingredients (soy sauce, oyster sauce, sesame oil, rice vinegar, sugar, water/broth, cornstarch, red pepper flakes, salt, pepper) in a small bowl and stir until cornstarch dissolves.
Cook
Heat wok or large skillet
Place a wok or large heavy skillet over high heat. When very hot, add 1 tablespoon vegetable oil and swirl to coat.
Sear squid quickly
Add squid rings and tentacles in a single layer. Let sit without moving for 30–45 seconds to get a light sear, then toss and stir for another 30–60 seconds until just opaque. Remove squid to a plate — do not overcook (total cooking time 1–1.5 minutes).
Stir-fry aromatics and vegetables
Add remaining 2 tablespoons oil to the wok. Add minced garlic, ginger, and scallion whites. Stir-fry 15–20 seconds until fragrant. Add red bell pepper and bok choy; stir-fry 1–2 minutes until vegetables are crisp-tender.
Combine noodles and sauce
Add cooked noodles to the wok along with the prepared sauce. Toss and stir continuously to coat noodles and vegetables, 1–2 minutes. The cornstarch in the sauce should thicken slightly and glaze the noodles.
Return squid and finish
Return the cooked squid to the wok, add scallion greens, and toss everything together for 30–45 seconds to heat through and meld flavors. Taste and adjust seasoning with additional salt, soy, or a squeeze of lime if desired.
Serve
Transfer stir-fried squid and noodles to a serving platter or individual bowls. Sprinkle with chopped cilantro or Thai basil, toasted sesame seeds if using, and serve with lime wedges on the side for squeezing. Serve immediately.
