Beef (USDA Prime) Marinade & Cooking

Prepare beef and marinade

Place the thinly sliced USDA Prime beef in a shallow dish or zip-top bag. In a bowl combine 6 tbs soy sauce, 2 tbs brown sugar, 1/2 cup grated Asian pear, 4 tsp minced garlic, 1 tsp grated ginger, 1 tbs sesame oil, 1 tsp gochujang (optional), 1/2 tsp black pepper and the sliced green onions. Stir until sugar dissolves and pour over beef. Massage to coat thoroughly, pressing the marinade into the meat.

Marinate

Cover and refrigerate for at least 1 hour and up to 4 hours. For best flavor, marinate 2–4 hours but avoid overnight to preserve texture with the pear.

Preheat grill

Heat grill or cast-iron griddle to high (about 450–500°F / 230–260°C). Oil the grate lightly with 1 tbs vegetable oil to prevent sticking.

Cook beef

Remove beef from marinade, letting excess drip off. Grill slices in a single layer for 30–60 seconds per side for rare-medium rare depending on thickness; thicker pieces may need 1–2 minutes per side. Do not overcrowd — cook in batches. Transfer cooked beef to a warm plate and tent with foil.

Finish & garnish

Sprinkle toasted sesame seeds and additional sliced green onions over beef. Offer lemon/lime wedges if guests like a citrus finish.

Premium Pork Marinade & Cooking

Prepare pork and marinade

Place thinly sliced pork in a bowl or zip-top bag. Mix 3 tbs soy sauce, 2 tbs rice wine (mirin), 1 tbs honey, 1 tsp gochugaru (or 1 tsp red pepper paste), 2 tsp minced garlic, 1/2 tsp minced ginger, 1 tsp sesame oil and 1/4 tsp black pepper. Pour marinade over pork and toss to coat evenly.

Marinate

Refrigerate for 30 minutes to 2 hours. Pork benefits from a shorter marinade than beef so it stays tender but not overly soft.

Preheat and cook pork

Preheat grill or griddle to medium-high. Lightly oil the cooking surface with 1 tbs vegetable oil. Grill pork slices 1–2 minutes per side until caramelized and cooked through (internal temp ~145°F / 63°C for medium), turning once. Cook in batches to avoid steaming.

Rest

Let pork rest 2–3 minutes before serving to allow juices to settle.

Banchan (Assembly & Serving)

Prepare and plate banchan

Arrange kimchi, seasoned spinach, seasoned soybean sprouts, cucumber salad, pickled radish slices and potato salad into small bowls or compartments. Keep portions small (about 1/4–1/2 cup each) so diners can sample many. Keep steamed rice warm in a rice pot or covered bowl (about 3 cups for 4 servings).

Prepare lettuce and perilla leaves

Wash and dry lettuce and perilla leaves. Arrange on a platter for ssam (wraps).

Set sauces and garnishes

Place ssamjang and sesame oil dip in small dipping bowls. Provide toasted sesame seeds and lemon wedges on the side.

Service & Enjoy

Family-style serving

Place the cooked beef and pork on warm platters near the banchan and rice. Invite diners to take a lettuce leaf, add rice, a piece of beef or pork, a dab of ssamjang, and a banchan or two; fold and eat. Provide tongs and scissors for easy portioning.

Keep hot items hot and cold items chilled until service. If cooking at table, cook meat fully to safe temperatures and avoid cross-contamination between raw and cooked sequences.
