In a mixing bowl, combine flour, sugar, cocoa powder, and salt. Mix well. Add the melted butter, egg, and white wine (or vinegar). Knead until a smooth dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

After chilling, roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles (about 4 inches in diameter). Wrap each circle around a cannoli form, sealing the edges with a bit of water.

Fry the Shells

Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the cannoli shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool completely before filling.
