Prepare the Tomatoes

Dice the tomatoes and place them in a bowl. Add 2 tablespoons of olive oil, salt, and pepper. Mix well and let marinate for about 15 minutes.

Make the Pesto

In a food processor, combine the fresh basil, pine nuts, 2 tablespoons of olive oil, and a pinch of salt. Blend until smooth. Adjust seasoning if necessary.

Prepare the Baguette

Preheat the oven to 400°F (200°C). Slice the baguette into 1-inch thick slices. Brush both sides with garlic oil (mix minced garlic with olive oil) and place on a baking sheet.

Toast the Baguette

Bake the bread in the preheated oven for 5-7 minutes or until lightly golden and crispy.

Assemble the Bruschetta

Spread a layer of pesto on each toasted slice of baguette. Top with the marinated tomatoes. Drizzle with balsamic vinegar and additional garlic oil if desired.
