    Prepare the Ingredients

    Begin by dicing the potatoes, slicing the mushrooms, and thinly slicing the onion. Cut the lardon into small pieces.

    Cook the Lardon

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the lardon and cook until crispy, about 5-7 minutes. Remove and set aside.

    Cook the Potatoes

    In the same skillet, add the remaining tablespoon of olive oil. Add the diced potatoes and season with salt and pepper. Cook until golden brown and crispy, about 10-12 minutes, stirring occasionally.

    Add Vegetables

    To the skillet with the potatoes, add the sliced onion and mushrooms. Cook for an additional 5 minutes until the onions are caramelized and the mushrooms are tender.

    Add Spinach

    Stir in the fresh spinach and cook until wilted, about 2 minutes. Return the cooked lardon to the skillet and mix well.

    Cook the Eggs

    In a separate pan, cook the eggs to your liking (fried or poached).

    Divide the potato and vegetable mixture into serving plates, top with shredded jack cheese, and place the cooked eggs on top.
