Prepare the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels.

Make the Grilled Cheese
In the same skillet, add a little butter if needed and toast the brioche slices until golden brown on both sides. Layer cheddar, Gruyère, and cream cheese between two slices of brioche. Grill until the cheese is melted and the bread is crispy.

Poach the Eggs
In a saucepan, bring water to a gentle simmer and add a splash of vinegar. Crack each egg into a small bowl and gently slide it into the water. Poach for about 3-4 minutes for a runny yolk. Remove with a slotted spoon and drain on paper towels.

Assemble the Dish
Place the grilled cheese on a plate, top with two slices of bacon, and then carefully place a poached egg on top. Drizzle with hollandaise sauce and season with salt and pepper.
