Prepare the Batter
In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, mix the buttermilk, melted butter, and eggs until combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix; it’s okay if the batter is a bit lumpy.

Cook the Flapjacks
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or non-stick spray. Pour about 1/4 cup of batter onto the skillet for each flapjack. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2-3 minutes until golden brown.

Serve warm with a drizzle of maple syrup, topped with diced fruit and a dollop of whipped butter.
