    Make the Biscuits

    Preheat your oven to 425°F (220°C). In a large bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough out onto a floured surface and knead gently. Roll out to about 1 inch thick and cut out biscuits. Place on a baking sheet and bake for 12-15 minutes or until golden.

    Caramelize the Onion

    Slice the onion and heat a skillet over medium heat with a bit of oil. Add the onion and cook, stirring occasionally, until soft and caramelized, about 15-20 minutes. Set aside.

    Cook the Bacon

    In the same skillet, cook the bacon until crispy. Remove and let drain on paper towels.

    Make Chive Mascarpone

    In a small bowl, mix together the mascarpone cheese and chopped chives. Set aside.

    Cook the Eggs

    In the same skillet, crack the eggs and cook to your desired doneness (sunny side up or scrambled).

    Assemble the Sandwich

    Slice the biscuits in half. On the bottom half, layer bacon, caramelized onions, a generous sprinkle of cheddar cheese, and the cooked egg. Spread the chive mascarpone on the top half and place it on top of the sandwich.

    Serve the biscuit sandwich warm with a side of fruit or potatoes.
