Make the Biscuits
Preheat the oven to 450°F (230°C). In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1 inch thick and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden.

Make the Gravy
In the same skillet, add 1 tablespoon of flour to the reserved bacon grease. Stir for about 1 minute until lightly browned. Gradually whisk in the milk and add black pepper. Cook until thickened, stirring constantly.

Assemble the Dish
Cut the warm biscuits in half. Layer with bacon, pour the gravy over the top, and place a fried egg on each. Garnish with crispy sage leaves.
