    Make the Biscuits

    Preheat the oven to 450°F (230°C). In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1 inch thick and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden.

    Prepare the Bacon

    In a skillet over medium heat, cook the bacon until crispy. Remove bacon and place on paper towels to drain. Reserve some bacon grease in the skillet for the gravy.

    Make the Gravy

    In the same skillet, add 1 tablespoon of flour to the reserved bacon grease. Stir for about 1 minute until lightly browned. Gradually whisk in the milk and add black pepper. Cook until thickened, stirring constantly.

    Fry the Eggs and Sage

    In a separate skillet, fry the sage leaves in a bit of oil until crispy. Remove and set aside. In the same skillet, fry the eggs to your desired doneness.

    Assemble the Dish

    Cut the warm biscuits in half. Layer with bacon, pour the gravy over the top, and place a fried egg on each. Garnish with crispy sage leaves.
