Macerate the Berries
In a bowl, combine mixed berries with a tablespoon of honey. Let sit for about 15 minutes to release their juices.

Prepare the Batter
In a large bowl, whisk together buttermilk, eggs, and melted butter. In another bowl, mix flour, oats, baking powder, and salt. Gradually combine the wet and dry ingredients until just mixed.

Cook the Flapjacks
Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter for each flapjack onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.

Serve
Stack the flapjacks on a plate, top with macerated berries, a dollop of whipped cream, toasted pistachios, and drizzle with warm maple syrup.
