Instructions
Prepare the Bacon
Cook the bacon in a skillet over medium heat until crispy. Remove and let drain on paper towels.
Form the Patties
In a mixing bowl, combine the ground beef with salt and pepper. Form into two burger patties.
Cook the Patties
In the same skillet, add a tablespoon of olive oil. Cook the patties for about 4-5 minutes on each side for medium doneness.
Add Cheese and Bacon
During the last minute of cooking, place a slice of Monterey Jack cheese on each patty and top with crispy bacon. Cover the skillet to melt the cheese.
Fry the Shallots
Slice the shallot into rings and fry in the skillet until golden and crispy.
Assemble the Burger
Toast the brioche buns. Spread smoked aioli on the bottom bun, add arugula, the beef patty with cheese and bacon, shallot rings, and cover with the top bun.
Serve
Serve the B&B burger with a side of fruit, potatoes, or salad.
