Prepare the Waffle Batter
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, combine the buttermilk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Let the batter rest for 5 minutes.

Cook the Waffles
Preheat your waffle iron according to the manufacturer's instructions. Pour an appropriate amount of batter onto the waffle iron and cook until golden brown, about 5 minutes. Repeat with the remaining batter.

Prepare the Pastry Cream
In a saucepan, heat 2 cups of milk until just simmering. In a bowl, whisk together 4 egg yolks, 1/2 cup sugar, and 1/4 cup cornstarch until smooth. Gradually whisk in hot milk, then return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened. Remove from heat and stir in 1 teaspoon of vanilla. Cool before using.

Assemble the Waffles
Layer the cooked waffles with a generous amount of pastry cream, sliced bananas, and a drizzle of Nutella. Top with whipped cream and sprinkle with toasted coconut.
