Wagyu Beef Tartar Preparation

Prepare the Beef
Finely dice the Wagyu beef tenderloin and place it in a mixing bowl.

Mix the Ingredients
Add the egg yolk, miso paste, Dijon mustard, chopped chives, salt, black pepper, and truffle oil to the beef. Mix gently until well combined.

Plate the Tartare
Using a ring mold, carefully plate the tartar mixture on a serving plate.

Make the Dough
In a bowl, combine warm water and yeast, allowing it to sit for 5 minutes until frothy. In a large mixing bowl, combine the all-purpose flour, squid ink, and salt. Add the yeast mixture and olive oil, mixing until a dough forms.

Knead the Dough
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Focaccia
Preheat the oven to 220°C (430°F). Punch down the dough and spread it out onto a greased baking tray. Create dimples in the surface.

Bake the Focaccia
Bake in the preheated oven for 20-25 minutes until golden brown. Allow to cool slightly before serving.
