Pasta and Sauce

Method

Preparation and Cooking

  1. 1

    Prepare the Saffron Butter

In a small saucepan, melt the butter over low heat. Add the saffron threads and let them infuse into the butter for about 5 minutes. Set aside.

  2. 2

    Cook the Pasta

Bring a large pot of salted water to a boil. Add the tagliolini and cook according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest.

  3. 3

    Make the Tomato Sugo

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant. Add the cherry tomatoes and cook until they start to burst and release their juices, about 5-7 minutes.

  4. 4

    Add Spot Prawns

Add the spot prawns to the skillet with the tomato sugo. Cook for about 3-4 minutes, or until the prawns are pink and cooked through.

  5. 5

    Combine Pasta and Sauce

Add the drained tagliolini to the skillet with the tomato sugo and prawns. Toss everything together, adding reserved pasta water as needed to create a saucy consistency. Season with salt and black pepper to taste.

  6. 6

    Serve

Drizzle the saffron butter over the pasta and toss gently. Garnish with fresh basil before serving.
