Roasting the Beets

Preheat the oven to 400°F (200°C).

Wash the beets thoroughly and trim the tops and roots.

Wrap each beet in aluminum foil and place them on a baking tray.

Roast in the oven for about 45-60 minutes, or until fork-tender.

Once done, unwrap the beets and let them cool slightly before peeling.

Making the Meringue

Gradually add granulated sugar, continuing to whisk until stiff peaks form.

Gently fold in the cardamom powder and crushed pink peppercorns.

Preheat the oven to 200°F (95°C) and line a baking sheet with parchment paper.

Spoon or pipe the meringue mixture onto the parchment paper in desired shapes.

Bake for about 1.5 to 2 hours until dry and crisp.

Arrange the roasted beets on a serving platter and top with meringue.
