Prepare the Filling

Sear the Pork Cheeks
In a large pot, heat a bit of oil over medium heat. Sear the pork cheeks until browned on all sides, then remove and set aside.

Deglaze and Braise
Pour in the red wine and scrape up any brown bits. Add the pork cheeks back, along with chicken stock, thyme, salt, and pepper. Bring to a simmer, cover, and cook on low for about 2 hours until tender.

Shred the Pork
Remove the pork cheeks, shred them with a fork, and mix them back into the sauce. Allow to cool.
Make the Pasta Dough

Knead and Rest
Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for at least 30 minutes.
Assemble the Raviolo

Roll the Dough
Divide the dough into quarters. Roll each piece thinly using a pasta machine.

Fill the Raviolo
Place a spoonful of the pork filling on half of the dough. Fold the other half over and seal the edges with a fork.
