Preparation of Coffee Mixture

    Brew 1 cup of strong espresso coffee and let it cool slightly.

    Mix 3 tablespoons of sugar into the warm espresso until fully dissolved.

Making the Filling

    In a large mixing bowl, separate the egg yolks from the whites. Whisk the yolks with 3 tablespoons of sugar until pale and creamy.

    Add the mascarpone cheese and vanilla extract to the egg yolk mixture and mix until smooth.

    In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture.

    In another bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the mascarpone mixture until fully combined.

Assembling the Tiramisu

    Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.

    In a rectangular dish, lay half of the soaked ladyfingers at the bottom. Spread half of the mascarpone filling over the ladyfingers.
