Dough Preparation

Activate Yeast
In a small bowl, dissolve sugar in warm water and sprinkle the yeast on top. Let it sit for about 5-10 minutes until it becomes frothy.

Mix Ingredients
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture along with olive oil.

Knead the Dough
Mix until a dough forms. Transfer to a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let It Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C).

Shape the Dough
Once the dough has risen, punch it down and turn it onto a floured surface. Roll or stretch it into a 12-inch round pizza base.

Add Sauce and Toppings
Transfer the dough to a pizza stone or baking sheet. Spread marinara sauce evenly over the base, then sprinkle mozzarella cheese, followed by pepperoni slices, and finally the grated Parmesan cheese.

Bake the Pizza
Bake in the preheated oven for 12-15 minutes or until the cheese is bubbly and the crust is golden.

Once out of the oven, top with fresh arugula before slicing and serving.
