    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the Pancetta

    While the pasta is cooking, dice the pancetta into small pieces. In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Make the Sauce

    Mix Eggs and Cheese

    In a mixing bowl, beat the eggs and combine them with the grated Parmesan and Pecorino Romano cheese. Add black pepper to taste and mix until well combined.

    Combine Everything

    Add the hot spaghetti to the skillet with the pancetta. Toss to combine. Quickly pour the egg and cheese mixture over the spaghetti, tossing continuously to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach the desired consistency.

    Garnish and Serve

    Serve immediately, garnishing with fresh parsley and additional black pepper if desired.
