Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil, then add the spaghetti. Cook according to package instructions until al dente, usually about 8-10 minutes.

  2. 2

    Prepare the Pancetta

While the pasta is cooking, chop the pancetta into small pieces. In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Mixing the Sauce

  1. 3

    Whisk Eggs and Cheese

In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined. Set aside.

Combining Ingredients

  1. 4

    Combine Pasta and Pancetta

Once the spaghetti is cooked, reserve about 1 cup of the pasta water, then drain the spaghetti. Immediately add the hot spaghetti to the skillet with the pancetta and toss to combine.

  2. 5

    Add Egg Mixture

Remove the skillet from heat and quickly pour the egg and cheese mixture over the hot pasta, tossing quickly to combine and create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serving

  1. 6

    Plate and Garnish

Serve the pasta carbonara immediately, garnished with chopped fresh parsley and additional cracked black pepper if desired.
